Broth adapted from the Woks of Life. Hand pulled noodles adapted from Omnivore’s cookbook. Makes 6–8 servings.

Noodles

Mix 80 ml of water per cup of all-purpose flour. One person eats a bit under 1 cup of flour (ie. 5 people eat 4.5 cups of flour). A bit of salt.

Knead for 2 minutes, then rest for 20 minutes. Knead for another 2 minutes, then roll out into 8 rectangular pieces. Coat generously with oil then let rest for 2 hours. Then can pull. Either put straight into boiling water or lay out, but don’t stack them, they’ll get stuck together. (NEXT TIME try with only 1 rest for 2 hours, see if that has the same outcome).
